This Frito Corn Salad is so easy to make and absolutely delicious. You can use regular Fritos or the Chili Cheese! Both are great!

❤️WHY WE LOVE THIS RECIPE
This delicious corn salad is super easy to make and will be a winner at your next potluck. Only a few ingredients and takes no time to throw together. We love this salad made with Chili Cheese Fritos. We think it gives it a great flavor and you won’t need any extra seasonings.
🍴KEY INGREDIENTS
- Whole kernel sweet corn
- Sweet peppers (red, green or yellow, whichever you prefer)
- Red onion
- Tomatoes
- Shredded cheese (I used colby/monterey jack mix)
- Mayonnaise
- Chili Cheese Fritos
- Cilantro (optional)
SWAPS
If you like different types of corn you can switch it up in this recipe. You can use a can of sweet corn and a can of the summer crisp or white corn. You can also leave out the cilantro, it’s optional.
🍽️HOW TO MAKE
That is what is so great about these easy summer salads, the hardest part is chopping up the vegetables! This salad can be made in less than 10 minutes which is one of the many reasons why we love it.
Step 1
Mix all ingredients except for Fritos and chill for a few hours. Add Fritos at time of serving and mix well and serve.
⭐TIP
Top the corn salad with the Fritos right before serving and stir into the corn. I believe it’s best this way and others agree. The crunch of the Fritos is a great addition to this salad!

Frito Corn Salad is always a good idea. We love it best made with Chili Cheese Fritos! This frito corn salad never last long at any gathering. Only a few ingredients and you can make this in about 10 minuts.
- 2 15 ounce cans of whole kernel sweet corn, drained and rinsed
- 1 cup of sweet peppers chopped
- 1/2 cup of red onion chopped
- 1 cup of tomatoes chopped (I used grape tomatoes)
- 2 cups of shredded cheese I used colby/monterey jack mix
- 1 cup of mayonnaise
- 1 9 1/4 ounce bag of chili cheese Fritos, broken up to size you prefer
- 1/4 cup of cilantro chopped
