With this, you end up with a peach mango pie that is not at all oily and is absolutely crisp. Another perk to this recipe is that it is very easy to eat. How to Cook Air Fried Peach Mango Pie
Start off by putting 15 ounces of diced mangoes, 15 ounces of diced peaches, 10 tablespoons of granulated white sugar, ½ teaspoon of vanilla extract, 1 teaspoon of lemon juice, and a pinch of salt in one bowl. Mix these together thoroughly.
Get your mixture, and place this in a pan. Apple some heat, and just cook everything for 5 minutes. As you are cooking, you can combine 1 tablespoon of cornstarch and 3 tablespoons of water. Mix these to create a slurry, and then pour this into your pan. Stir everything together, and just cook until you get a nice filling consistency once the mixture thickens. Then transfer this to a container, and let it cool.
Creating the bread pockets
Grab your 12 slices of loaf bread, and lay each slice down on a chopping board. Slice the dark edges out. Then dust some flour on your rolling pin, and then just use this to flatten your bread. You will now need to scoop about 2 ½ tablespoons of your filling, and place this in the middle of the flattened bread. Fold the bread symmetrically, and then brush some beaten egg on the sides. We will secure our bread pockets by pressing the edges against each other. Repeat this step until you have used up all of your filling.
Coating the bread pockets in breadcrumbs
Put 2 tablespoons of all-purpose flour, 2 eggs you’ve beaten, and 1 cup of Good Life Panko Breadcrumbs in separate containers. And then dredge each bread pocket in all-purpose flour. Then dip them in the container with beaten egg. Lastly, we will roll these in Panko Breadcrumbs. Then just spray some cooking oil on each side of the coated bread pockets, and let this sit on a clean plate for a minimum of five minutes.
Air frying the peach mango pie
Here comes the exciting part! We will just place our pies in the air fryer carefully, and let them cook in 370 °F. Keep the air frying going until the breadcrumbs become golden brown. Then flip the pies over, and let the other side get cooked too.

Make the filling by combining mangoes, peaches, sugar, vanilla extract, lemon juice, and salt in a bowl. Mix well.

Pour the mixture in a pan. Cook for 5 minutes.

Combine cornstarch and water to create a slurry. Mix well. Pour the mixture into the pan. Stir and continue cooking until the mixture thickens. Remove from the pan and let it cool down.

Lay each slice of loaf on a chopping board. Slice-out the dark edges. Dust flour on your rolling pin and then flatten each bread slices.

Scoop around 2 ½ tablespoons of filling mixture and put it on the center of the flattened bread. Make bread pockets by covering the filling. Do this by folding the bread symmetrically. Brush beaten egg on the sides and secure it by pressing the edges against each other. Do this step until all the filling are consumed.

Dredge the bread pockets in all-purpose flour. Dip in beaten egg. Roll it in Good Life Panko Breadcrumbs. Spray cooking oil on both sides and then arrange in a clean plate. Let it stay for at least 5 minutes.

Air fry in 370F until the breadcrumbs turns golden brown. Flip the peach mango pie and do the same on the opposite side. Serve. Share and enjoy!
