When it comes to Filipino vegetable dishes, the widespread appeal of laing is something you definitely cannot ignore. I mean, who thought that mixing taro leaves and coconut cream together to make a truly delicious viand or ulam? But you could have it a completely different way— mixed in with leftover white rice! Laing Fried Rice is my way of putting together two favorites— laing and fried rice— to have a most filling, healthy and easy to make lunch dish!
Did you know that this recipe only takes about 20 minutes to recreate? It may take a bit longer, but if you want this a bit meatier, you can also toss in some pork or shrimp. And if you’ve got a lot of love for spice, you also have the option in this recipe to add some red chili.

How to Cook Laing Fried Rice
Mixing salt and rice together
The first two things we will need are 5 cups of leftover white rice, and ¼ teaspoon of salt. It’s best to use leftover rice for most fried rice recipes as they are easier to mix in the pan. The texture is also generally more favorable for the dish. Just put the rice and salt in a bowl, and mix these gently together. Keep doing this until your components are well-blended.
Pour 4 tablespoons of cooking oil into a wide pan. Then when your oil gets hot, you can put 5 cloves of garlic you’ve crushed inside. We will cook this just until the garlic turns light brown.
Get your 1 cup of cooked laing. Transfer this to your pan, and stir the mixture with our garlic and oil. Let’s cook everything together for just 2 minutes.
Toss in your salted rice from earlier. Then keep cooking everything for 5 to 8 minutes. Just stir fry your rice until it becomes well-blended with our components.
We can now add ½ cup of toasted anchovies, also known as tustadong dilis. Stir this into the fried rice, and let it cook for 1 minute. After that, you can just put your rice mixture on a serving plate of choice. If you would like, you can top this off with 3 pieces of red chili.

What to Serve with Laing Fried Rice
Fried Tilapia
This is yet another simple dish that is quick and easy to prepare. Making your Fried Tilapia happen would take just about 20 minutes like our Laing Fried Rice. That’s because after salting your fish, all you have to do is mix in some oil in a pan, throw in your fish, and fry each side well. It’s so simple that it only really takes 3 ingredients to put together! I definitely love this dish when I am on the go, but want to serve something crispy, salty and delicious. But if you are not a fan of the smell of fish, I would suggest frying this outside your house.
Fried Eggplant
You might be noticing that our main dish goes quite well with fried dishes. But if you want something a bit healthier than our tilapia, you can incorporate some Fried Eggplant into your meal. This is an even easier dish to recreate with just approximately 15 minutes needed to whip it up! And we also can’t overlook the fact that just 4 ingredients are needed for this, all of which are pretty common kinds of food. You may already find the Chinese eggplant, cooking oil, flour and bagoong alamang in a standard Filipino kitchen. The flour is perfect for giving our dish a delightful crispiness to it that makes it stand out from other simple eggplant recipes. It also helps keep the oil from splattering as we cook.
Chicken Molo Soup
Some warm, comforting soup also goes quite nicely with fried rice dishes. That’s why you should also have a rich bowl of Chicken Molo Soup beside our Laing Fried Rice. This is meaty and well-seasoned, as it is filled with flavor from shrimp, fish sauce, sesame oil and more. Definitely eat this while it is satisfyingly hot. And if you like some sourness in your dish, I would suggest squeezing a calamansi on your soup for added flavor.

Laing Fried Rice
This is a quick fried rice recipe that makes use of laing. These are taro leaves that were cooked in coconut milk.
Instructions

Combine salt and rice in a bowl. Gently mix until well blended.

Heat the oil in a wide pan.

Add the garlic once the oil gets hot. Cook until light brown.

Put the laing in the pan. Stir and cook for 2 minutes.

Add the rice. Continue to cook for 5 to 8 minutes. Stir fry the rice until it blends well with the rest of the ingredients.

Add the toasted anchovies. Stir and cook for 1 minute.

Transfer to a serving plate. Top with red chili.
