Do you tend to cook more rice than you are able to finish? Filipinos love this side dish, and so sometimes, we underestimate just how easy it is to get full from one cup. Of course, you can always refrigerate your rice, and heat it up again the next day for your meals. But that’s just no fun, is it? If I were you, I would use that opportunity to create some delicious Chicken Fried Rice!
This is a delicious, yet surprisingly simple recipe. It has all the great ingredients that make a perfectly salty and meaty fried rice dish, but takes a bit less prep. That is partially because we use frozen mixed vegetables for this, which you can easily buy prepackaged at the market. The cooking process is even easier as all you will need to do is prepare the chicken, and toss your ingredients together in the pan in the right order.
What does Chicken Fried Rice taste like?
If that piqued your interest in cooking up some fried rice then here’s a bit of a preview for your end result. Our Chicken Fried Rice is a savory one, seasoned to perfection with the likes of soy sauce and sesame oil. You will also get a ton of meaty flavor from chicken breast. But what truly gives the rice that satisfyingly rich and salty taste is our mix of minced onion and garlic.
Given how tasty this fried rice is, you can actually cook just this for your meal. It can definitely stand alone as it is both hearty and satisfyingly delicious. However, you can have it with some other yummy dishes, which I will tell you more about later.

What to Serve with Chicken Fried Rice
Pork Dumplings
If you are not having your fried rice with dumplings then it’s definitely time to start now. This is a pairing that’s long been proven to be great together. It’s in restaurant menus, local markets, and hopefully, in your kitchen soon too! I love the meaty, but light taste of these Pork Dumplings with the saltiness of our Chicken Fried Rice. The simplicity of this steamed dumpling just bounces off the flavorful quality of most kinds of fried rice. Of course, you can also enjoy this with plain rice. But for me, the best eating experience would be having this dish enriched with chives and ginger alongside the goodness of our delicious Chicken Fried Rice.
Creamy Macaroni Soup (Ala Jollibee)
As I mentioned earlier, our main recipe is one that is filling enough to be a meal in itself. That being said, a fitting side to that dish to truly complete it is some Creamy Macaroni Soup Ala Jollibee! Plenty of Filipino dishes have stew because the warmth this brings to any meal is hard to omit. And so you can just bring some of that to your breakfast, lunch or dinner with the perfect soup dish. This way, you also get to have the fast food favorite without having to head out to the store. Plus, it can be even better homemade because it is healthier, and all your ingredients can taste truly fresh.
Lumpiang Shanghai
I don’t know about you, but a crunchy side is one of the best things to pair with fried rice. And so I also like to turn to a beloved Pinoy recipe that most people have probably had at least once at home— Lumpiang Shanghai! Now if you have yet to learn how to make this, I have a pretty easy recipe you can follow. You just have to mix your ingredients for the filling together, assemble your spring roll, and fry them up! And to ensure you cook this right, steer clear of the high heat setting on your stove. This helps us get the filling evenly cooked.
Dynamite Lumpia
Up next for my recommendations is a street food classic that you may have dared yourself to try out when you were younger. After all, it can be a bit intimidating to eat an entire long green chili. But I’d say the crispy, beautifully brown wrapper definitely helps make this dish seem a lot less scarier. Don’t forget that Dynamite Lumpia also comes with plenty of delicious cheddar cheese to balance out the spice in our peppers. And that kind of pairing in flavor truly makes for one of the best snacks! I also love to have this beside fried rice because it can be somewhat of a palate cleanser.

How to Make Chicken Fried Rice
First on our list of components is 6 ounces of boneless chicken breast. We need the boneless kind as we will need to cut this up into small pieces. And you would not want bones to get in the way as you are chowing down on your fried rice. Once you are done with cutting up the chicken, put them in a bowl. Then pour 1 tablespoon of oyster sauce, 3 tablespoons of soy sauce, and ½ teaspoon of sesame oil inside. Mix everything together well, and then set this aside.
Let’s get our 3 tablespoons of cooking oil, and let this heat up in a pan. Once it is hot, you can put your 2 beaten eggs inside. Fry these up until they are cooked all the way through. Then transfer them to a container of choice. Just chop these up slightly into smaller pieces. We will also be setting this aside for now.
Working with garlic and onion
It’s time to get your 1 onion and 2 cloves of garlic, both of which are minced. You will need to put these in a pan, along with the remaining oil from cooking the eggs earlier. If you need more oil though, feel free to add this. Just sauté your garlic and onion together.
Remember the chicken we marinated awhile ago? Place this inside your pan when your onion becomes soft. Just stir-fry everything together for 2 to 3 minutes. You will know the chicken is good to go once it is nice and light brown.
Put your 1 ½ cups of frozen mixed vegetables, which would contain carrots, green peas and corn, inside the pan. Keep stir-frying everything for 2 minutes. Just make sure you are letting all of these veggies cook evenly.
Putting the rice in the pan
Here comes one of our main ingredients! Put 3 cups of cooked white rice in the pan. Then just toss your various components together. Keep this going until the colors even out, and everything is well-blended. And then cook the fried rice for 3 more minutes.
Not a lot of time has probably passed, but we’re nearly at the finish line! Just add salt and ground black pepper as needed. You can be generous with this, but keep in mind that our other ingredients like soy sauce are already quite flavorful.
Once that’s done, you can transfer your delicious mix of ingredients onto a serving plate. The best and truly appropriate way to have your fried rice is while it’s hot. And so I would recommend eating this right after you’ve cooked it!

Chicken Fried Rice Recipe
Quick and easy chicken fried rice at home
Instructions

Cut the chicken into small pieces. Arrange in a bowl and combine with the sauce ingredients. Mix well. Set aside.

Heat the oil in a pan. Fry the beaten eggs until done. Remove the cooked eggs from the pan. Chop it into pieces, and then set it aside.

Using the remaining oil (add more if needed), saute the garlic and onion.

Add the marinated chicken once the onion softens. Stir-fry for 2 to 3 minutes.

Add the vegetables. Continue stir-frying for 2 minutes.

Add the rice. Toss until all the ingredients are well blended. Continue cooking for 3 minutes.

Season with salt and ground black pepper.

Transfer to a serving plate. Serve immediately.
