This recipe is a perfect go-to when you are craving something savory and healthy, but also involves a simple cooking process. We will mostly just be sautéing the likes of Chinese eggplant, ground pork and oyster sauce together. Just be warned that this has a pretty long list of ingredients. How to Cook Eggplant with Ground Pork in Oyster Sauce
Take 3 tablespoons of cooking oil, and heat this up in a pan. Then add 2 Chinese eggplants you have sliced. We will fry each side until they soften. Afterwards, you can just transfer the cooked eggplants to a clean plate. We will get back to these later.
Sautéing onion, garlic and ginger
Pour 2 more tablespoons of cooking oil, as well as ½ teaspoon of sesame oil. Then place 3 cloves of garlic and 1 onion, all of which are minced, inside the pan. Add 1 thumb of ginger as well. For some richness to the dish, we will be sautéing all of these together until the onion softens.
Now we can add 4 ounces of ground pork. Keep an eye on this as you are sautéing it, making sure it does not get overcooked.
Integrating some seasonings
Has your pork turned light brown in color? That would be your sign to pour 1 tablespoon of soy sauce and 2 tablespoons of oyster sauce inside. We must also add 1 teaspoon of brown sugar, and ½ cup of water. Just keep all of these yummy ingredients cooking until the liquid has evaporated.
We’re down to our last few ingredients! Just put 1 red bell pepper inside, as well as the eggplants we prepared earlier. Stir-fry all of your components together for 3 minutes. Then you can sprinkle in as much salt and ground black pepper as you would like.
Transfer your meal onto a serving plate of choice. I would say this is best while freshly cooked and hot over some warm rice.

Eggplant with Ground Pork in Oyster Sauce

Instructions

Heat 3 tablespoons of cooking oil in a pan. Fry both sides of the sliced eggplants until it softens. Transfer the eggplants on a clean plate. Set aside.

Add the remaining cooking oil and sesame oil. Saute the onion, garlic, and ginger.

Add the ground pork once the onion softens. Saute it until the color turns light brown.

Add soy sauce, oyster sauce, sugar, and water. Continue cooking until the liquid evaporates.

Add the bell pepper and then put the eggplants back into the pan. Stir fry for 3 minutes.

Season with salt and ground black pepper.

Serve hot over rice. Share and enjoy!
