Magadha, was one of the ancient kingdoms of India and one of the significant ones too.  Present-day Bihar is what was, as per history, the age-old city of Magadha. Famous for its importance in Buddhism, the cuisine originating from this land upholds an aroma, a taste, very unique to peninsular India. Bihar’s cuisine is rather an offbeat gourmet experience one may try to explore. This time, Radisson Blu, Noida once again cooked the aroma celebrating the flavours of Magadha.

At the entrance lies a small display of all that speaks of Bihar. A small antique charpai, a traditional Indian way to blend spices, and more.

What do we want as we enter a place after a hot-humid day of work? A refreshing welcome drink, right? And that’s exactly what we got.

They first served a Sattu ka Sharbat as a welcome drink. Poured in a matka with a slice of lemon and ice, it was truly a refreshing drink to begin the gastronomical experience. Sattu or roasted gram flour is a healthy ingredient that finds its traces in Bihar. The people here have known this flour for ages and there could not have been a better drink to commence with.

Next, we were served some regular starters that were blended with the food aesthetics of Magadha. In a platter of spices, there was tender paneer tikka, tossed in spicy sauce and rightly burnt, crispy fish fingers, chicken, and sattu ke kebabs. Sattu ranks amongst the staple dishes and one dishes that embody the essence of the cuisine of Magadha.

Without further ado, we dived into the true flavours of Magadha and our first dish was, the very famous Litti chokha. Freshly baked, dipped in ghee and served with a side of sumptuous baingan chokha and chilles. It was perfectly cooked, with the right amount of spices and we could not stop just at one.

Enjoying food is not just about taste, it is also about presentation. There was a good array of dishes presented in Matkas giving a look of what a traditional Magadhi cuisine might look like.

This cuisine isn’t about rich gravies and exotic preparations, this gourmet is all about simplicity at its best. It’s about serving spicy food whose flavours will burst in the mouth like a home-cooked meal. For sides, there was Alloo and Loki ka Chokha- a mashed blend of potatoes and bottle gourd. Other than this there was Dal Ki Dulhan, Home Style Karela and Chana Masala.

The non-veg section encompasses one of the most iconic meals from the cuisine of Bihar – the Meat Champaran. As the name suggests, it finds its roots in Champaran and has spread its aroma far and wide. Meat Champaran was a delicate tender meat blended with spices, ghee a luscious taste of ginger-garlic. Try it with their crispy bread or steamed rice and it will paradise for foodies. Along with this, there was Darbangha style Chicken, Sarso Macchi (Fish) Curry for the taste buds to savour.

After a delectable and savoury indulgence of spices and tender meat, we come to the final course, the desserts – Bihar is famous for its Malpua with a side of rabri (Time to keep that sugar–calorie quotient aside). There was a variety of options like kesar peda, barfi, and more. However, we recommend the kesar peda is a bite not to be missed.

The last bite of dessert was a perfect end to a soul-satisfying experience. From tender meat, seeped in spices and that touch of home-cooked meals is what makes up the flavours of Magadha, a.k.a, Bihar. From hospitality, to aesthetics to food, it was a savoury experience.
