Much like you do with smashed potatoes and smashed brussels sprouts, you start by precooking the broccoli. Once tender, you use the bottom of a glass to flatten it. After brushing the broccoli with olive oil and sprinkling on some grated parmesan, you put it in the oven until the cheese melts. The broccoli that results is extra crispy — a surprising feat, given that the veggie tends to be on the mushy side.

Ingredients
- 1 broccoli crown
1/4 cup olive oil
4 garlic cloves, minced
1 teaspoon any seasoning
2-4 tablespoons grated parmesan
Directions
- Wash and cut the broccoli. Keep the stems short if you want the end result to be more disc-shaped.
- Arrange the florets onto a baking sheet. Don’t worry about lining or greasing the pan, because you’ll be adding olive oil later.
- Bake the broccoli in a 400°F oven for 15-20 minutes or until tender.
- While the broccoli is in the oven, combine the olive oil with minced garlic and any seasoning or spice mix of your choice.
- Remove the broccoli from the oven, then use the bottom of a glass to smash down each floret.
- Brush the broccoli with the olive oil mixture, then sprinkle with grated parmesan cheese.
